As the world becomes a truly global community, culinary fusions and fissions happen all the time. People travel from one country or continent to another and bring along their food, fashion and culture. The dish we are describing this time is a derivation of a mainstay of Italy and Italia America. It’s a vermicelli salad with an African or in this case a Sierra Leonean twist.

It is a simple vermicelli and rice dish with a tossed salad on the side, and a few protein supplements. It is very healthy and tasty with many food groups represented for a balanced culinary experience. The vermicelli and rice mix are cooked to medium consistency and fluffiness. A tossed green salad, with raw or steamed carrots, diced tomatoes or steamed corn is added to the side or in another platter. A piece or two of fried, steamed or sauteed fish and a hard-boiled or sunny-side-up egg compliments the platter. Because ground chili pepper is the spice of life in West Africa, a small mound on the side becomes a welcome addition for healthy bowel motility. A cube of Maggi seasoning is optional (some diners prefer liquid Maggi sauce) to enhance flavor as needed.
